Ainslie Lubbock is one of Victoria’s most well-regarded hospitality figures. She brings exceptional skill, style and warmth to our dining spaces and it’s these attributes that make her the perfect leader of the team. Her attention to detail and contemporary service style will be evident at every table.

Ainslie and her team create dining experiences defined by our region, made memorable through the produce we use and the care we take serving it to you. She has worked in the hospitality industry for over 15 years, leading service teams in high-end venues including The Royal Mail Hotel, Attica and Pei Modern Melbourne. In 2012, she was awarded the Good Food Guide Service Industry Award and the Gourmet Traveller Maître d’ of the Year Award. Ainslie was in the first graduating class of the Court of Master Sommeliers in Australia and has developed wine lists that have garnered multiple wine glasses in Australia’s Wine List of the Year Awards.

Ainslie Lubbock brings impressive service stripes and wine panache to her role as Service Standards Business Manager at Pt. Leo Estate. Cutting her teeth at The Royal Mail Hotel, Dunkeld, Lubbock has led service teams at Victoria’s most progressive restaurants, including Attica and Pei Modern, and more recently, Cutler & Co.  Widely respected within the industry, her CV includes winning Gourmet Traveller’s Maître d’ of the Year (Pei Modern, 2012) and The Age Good Food Guide Service Excellence Award (2012).

A former Assistant Sommelier and Restaurant Manager at The Royal Mail Hotel, she has expert knowledge of classic wines, professional cellaring and service skills and has devised wine lists that have reaped multiple ‘wine glass’ awards at the Gourmet Traveller Wine List of the Year awards. Lubbock’s attention to detail, warmth, efficiency and consistency all contribute to her signature, contemporary service that will be an asset to Pt. Leo Estate Restaurant and Laura.

What is your favourite Pt. Leo Estate sculpture?

Jeppe Hein – Semi Circular Mirror Labyrinth  – For me this is such a timeless and sleek interactive piece

What is your favourite Pt. Leo Estate beverage?

I love the texture and beautiful perfume of the 2020 Rosé.  It’s classy and eminently enjoyable – much like the Estate itself

What is your favourite Pt. Leo Estate dish?

Pt Leo Restaurant: Tuerong Farm semolina cavatelli, smoked Flinders mussels, brown butter, mint. Effortlessly local and totally delicious- this dish always over delivers!

What is your favourite thing to do on the Mornington Peninsula?

I love the coastal walk trail behind the number 16 beach in Blairgowrie.  This – and generally the close community and incredible landscape of the Peninsula are highlights for me.
