Nathan’s love for cooking began in his role as an apprentice chef at Paringa Estate on the Mornington Peninsula, where Head Chef Julian Hills demonstrated that a passion for food can be a lifelong career.
After 4 years at Paringa Estate, joining Pt. Leo Estate in 2017, Nathan progressed from a Commis, Chef de Partie and Junior Sous in the Pt. Leo Kitchen, to his present role of Senior Sous across both Laura and Pt. Leo Restaurant. With each professional progression Nathan ensures that as his technique and knowledge develop, that these qualities and skills are transferable to the kitchen team. Career highlights in his role at the Estate involve being a part of the kitchen team when awarded Best New Restaurant of 2018 as-well as being promoted to his role of Senior Sous Chef in the fine dining kitchen of Laura.
Nathan brings loyalty, empathy, and accountability to his role as Senior Sous at the Estate, motivated and determined to succeed both on a personal and collective level. Over his years at the Estate Nathan has become a valued member of the kitchen team, describing Pt. Leo Estate as a special place as it is where his career as a chef gained significant momentum.
