Trophy for Best Sparkling at the 2025 Mornington Peninsula Wine Show

A refined blend of 60% Pinot Noir and 40% Chardonnay. This award-winning wine was made with hand-picked Estate fruit and gently whole bunch pressed before undergoing traditional bottle fermentation and disgorged after 60 months ageing on the lees.
The nose is fresh and specific, offering lemon blossom, and hints of green apple, underpinned by the savoury warmth of brioche and almond. On the palate, bright citrus zest and fine minerality are wrapped in a creamy texture, leading to a taut, saline finish. Our favourite pairing with this wine is oysters, available in all three of our dining spaces.

Now hitting its stride with bottle age, this Chardonnay shows apricot, nectarine, citrus blossom and subtle oak spice on the bouquet. The palate is elegant and balanced with citrus and stone fruit flavours building toward a long, fresh finish supported with well-integrated acidity.

A refined and elegant example of a cool climate Shiraz, with darker fruits and violets on the nose. This medium-bodied wine exhibits flavours of plum, spice, black pepper and mocha flavours all filling the palate. This Shiraz offers a long, lingering finish and will be best enjoyed now.
