Reserve Chardonnay 2023

This Chardonnay is a blend of our three best clones, P58 and B95. We select 6 rows within each block and thin them to one bunch per shoot as well as giving them extra attention at shoot thinning. Hand-picked fruit is gently whole-bunch pressed into a tank and settled overnight. The juice then transferred into French oak 500 litre Puncheons (25% New, 30 % second use and 45% older) and inoculated with a neutral yeast. From May until late winter the barrels were stirred occasionally until MLF was completed in 80% of the blend. The wine was left on yeast lees until bottling in January 2024.
